Overview
Balsamic sauce (Crema di Balsamico), also known as balsamic cream, is a thick, dark, sweet and sour sauce made with balsamic vinegar (Aceto Balsamico). It has the consistency of syrup and is used to add elegant flavor and decor to dishes. Unlike classic balsamic vinegar, balsamic sauce often contains additives to achieve a thicker texture and a sweeter taste.
Composition (typical):
- Balsamic vinegar (Aceto Balsamico): The base of the sauce, which determines its taste. The quantity and quality of balsamic vinegar used significantly affects the final product.
- Modified corn starch or other thickeners: Added to thicken the sauce and give it a creamy consistency.
- Sugar or glucose syrup: Added to add sweetness and soften the acidity of vinegar.
- Caramel (E150d): Often used to add richer color and sweetness.
- Xanthan gum (E415): Used to stabilize the sauce and prevent flaking.
- May contain sulfites: Some manufacturers add sulfites as a preservative.
